A favorite

I cook a lot, but I've never claimed to be a "good" cook. My cooking is more out of necessity than desire.  I want to try to control what we eat, while Jackson's interested in the financial aspect of eating in. (We both take leftovers to work every day.)  Anyway, this is one recipe that makes me feel like Martha. It's not intimidating with all those fancy ingredients, it's easy, delicious & I categorize it as Gourmet, for my kitchen!  Thought I'd share it for those that may be looking for an addition to their collection...

Raspberry Marinated Pork Chops                                 Sauce
1/2 cup dry red wine                               1/4 cup blackberry preserves
1/2 cup low sodium soy sauce                 1/4 cup dry red wine
2 Tbsp sesame oil                                   1 & 1/2 Tbsp Dijon mustard
1/2 tsp fresh ground pepper                    1 Tbsp low sodium soy sauce
1 clove garlic, minced                             1 tsp lime juice
4 pork chops                                          1/2 tsp fresh ground pepper

1) Combine first 5 ingredients & pour into a heavy-duty ziplock bag; add pork & marinate in refrigerator for at least 2 hours and up to 2 days, turning occassionally.
2) Remove pork from marinade. Discard marinade.
3) Heat skillet over medium high & place pork in skillet; cook until no longer pink in middle.
4) Slice into 1/4 inch strips and serve with sauce.

Sauce directions: Combine all ingredients in sauce pan and heat until mixed well & warm enough to serve.
